Last night I made a half meat and half veggie pizza for my Breast Cancer Retreat potluck! It was our second potluck since the retreat. I missed the first one since I was sick😦 So I was glad I got to see some of the retreat-ants again–some of whom I haven’t seen since the end of May! The host’s daughter came back for seconds and thirds which made me very happy! She asked me for the recipe so here it is:
1/4 cup of roasted dried tomatoes
1/3 cup of diced olives
1/2 lbs of sheep feta
1/4 cup of veggie or chicken broth
12 oz of chopped artichoke hearts cooked
5 strips of bacon
1-1/2 to 2 cups of tomato basil marinara sauce
2 teaspoons of minced garlic
Red Mill Pizza flour (gluten-free)
Set your oven for 425 degrees.
Follow the directions on the package for making the dough. Instead of water as recommended, I use veggie or chicken broth and also add about a teaspoon of minced garlic to mix with the gluten-free flour.
The Red Mill directions says it makes a 12″ pizza but I like to make the crust really thin so I use a 16″ diameter or a 16″x12″ aluminum pan. Use the coconut oil to grease the pan and spread the whole tray with half the dough. I found using wet hands helps to make spreading it easier so have a bowl of water handy. Crisp the bacon in a frying pan. Set the bacon aside to cool. To save time, you can also get precooked bacon from Trader Joes which is what I do;-) If the artichoke is unseasoned, add a couple pinches of salt and mix.
When the pizza dough is ready for toppings, spread the marinara evenly. I use Trader Joes organic tomato basil marinara. Next sprinkle the artichoke bits per the entire pizza. Use a scissors to cut the bacon into bits and sprinkle over 1/2 of the pizza. Sprinkle the olives and roasted tomatoes on the other half. Finally crumble the feta and sprinkle on top of the entire pizza.
Bake at 425 degrees for another 15 minutes and voila: pizza night for the entire family!
