Friendship Cookies: Flourless Ginger Almond Cookies With Raisins

 Prep time: 30 minutes; makes about a dozen cookies

This recipe is one I like to make for friends especially friends who have helped me on my journey through breast cancer. It’s also incredibly simple and easy to make and you can refrigerate them. They come out chewy and moist and you won’t want to have just one. Now a days I feed these to my Air BnB guests. They can’t believe it’s flourless!


1/4 cup crystallized ginger chopped into bits

1/4 cup organic raisins

1 cup almond butter

one egg

1 and quarter teaspoons of baking soda

1/3 cup of Palm sugar


Heat the oven to 350 degrees. Blend the egg and palm sugar and baking soda with a fork. Add the almond butter and mix well. Fold in the ginger and raisins and mix with a fork.

Put a sheet of wax paper on a large baking sheet. Using a teaspoon, scoop out dollops about 1-1 1/2″ round. With the back of a spoon, mash the dollops down a bit. Bake for 13-15 minutes. Test with a fork–if it comes out clean, then it’s cooked all the way through. Cool at room temperature for 5 minutes. Be ready for the smile on your friends face when they bite into one of these!
